About Me

Hi!  My name is Rachel and I am lover of foods.  I love the varieties, textures, flavors, colors, and the ways they can be transformed.  I am fascinated by the way foods impact the body and overall health.  It is this fascination coupled with my love of food that has led me to study nutrition.  I have my B.S. in Dietetics from Marshall University and currently working towards my M.S. in Dietetics and the Dietetic Internship.  My food beliefs consist of limiting the amount of processed foods and sodium in the diet and eating as many fruits, vegetables, lean meats, and whole grains as possible.  I enjoy making foods from scratch; I find the process therapeutic.  Yes, this includes breads, wonton wrappers, dressings, and spice blends.  I do understand that many people do not have the time nor capabilities to make certain products from scratch.  If it is a product that can be purchased at the store, but I choose to make it myself, I will provide the recipe I use.

This site will primarily be a place for me to gather my thoughts about food and living a healthy lifestyle.  I find that food is a topic I talk a lot about, probably with great frustration to my family and friends.  The content will consist of recipes I find and/or develop myself and general nutrition information and beliefs.  Like most people, I struggle with eating healthy foods and getting enough exercise.  This will also be a place for me to document my struggles and successes.

I would appreciate that readers withhold any negative comments.  These will not be responded to and I reserve the right to remove them as I see fit.  Negativity does not help anyone who is trying to learn and better their life.
